Mr Haynes is a highly experienced chef and hospitality leader who has spent more than 12 years working in some of the UK and Australia’s leading restaurants.

As Culinary Manager, Mr Haynes will play a critical role in elevating and showcasing unique Australian food and culinary experiences, and will embed initially at Z1Z’s first restaurant, Cooee, located on the banks of Perth’s iconic Swan River.

Before joining Z1Z, Mr Haynes has served as Executive Head Chef at Sydney’s Chef’s Hat-awarded Barangaroo House, owned by Matt Moran and Solotel, and Head Chef at Chiswick Restaurant. His experience also includes work at Aria Restaurant, also in Sydney, and the Michelin starred Gordon Ramsay at Claridge’s in London.

As the lifestyle division of Tattarang, Z1Z invests in services, products and experiences that bring the unique essence of Australia to guests. The highly diverse portfolio includes hospitality, food & beverage, fashion and sport and includes iconic Australian brand R.M.Williams, Indiana Tea House in Cottesloe, the proposed Ningaloo Lighthouse Resort in Exmouth and the Western Force rugby team.

General Manager of Hospitality at Z1Z, Alan Ford, welcomed Mr Haynes’ appointment, saying his culinary acumen and diverse experience will be extremely valuable to the broader Z1Z team.

“Z1Z was created with the clear intention to curate and showcase the world-class food and lifestyle experiences that Australia has to offer. Tom’s background working in and leading some of Australia’s best restaurants will be a terrific resource to our existing team as we continue to look for the best ways to celebrate and share unique Australian foods and experiences,” Mr Ford said.

Mr Haynes paid tribute to his mentor Matt Moran for his friendship and strong support throughout his career development and said the chance to join Z1Z represented an exciting new chapter.

“The opportunity to be actively involved in the development of what can be a globally-important food and lifestyle business like Z1Z is what I’ve been working towards throughout my career and I look forward to collaborating with our passionate team and growing the Z1Z network even further,” Mr Haynes said.
